I went to the store intending to buy ingredients to make a virgin mojito with lime, but I guess it wasn’t very wise to go on a Sunday (when everyone else is doing their grocery shopping) because they ran out of lime. Not a single lime in sight. Also, as it was a very hot day here in London the store ran out of ice. Then I figured I’d just improvise and use lemons instead with chilled carbonated water (I’m probably one of the few people in London who doesn’t own a freezer). So without further ado, the recipe for making 2 refreshing glasses of virgin lemon mojito:
Serves 2


  • 4 sprigs of mint leaves
  • 4 teaspooon of brown sugar
  • 1 lemon
  • 60ml of soda/carbonated water
1. Remove the mint leaves from the stems and place them into a jug.
2. Add the brown sugar into the jug.
3. Using a pestle, crush the mint and sugar in the jug.
4. Cut the lemon into half and squeeze the lemon juice into the jug.
5. Add the carbonated/soda water and pour the mojito into 2 glasses to serve.
